Easter Recipe

Executive Chef at the Athenaeum, William Baker has kindly passed on his favourite “chewy chocolate cookie” recipe, we think you’ll agree it’s an absolute winner, enjoy!

Chewy chocolate cookie (60g each)


2kg flour

12g bicarbonate soda

1200g dark brown sugar

400g caster sugar

1360g butter

400g eggs

160g egg yolks

1600g chocolate chips

2g salt

300g cocoa powder


Mix all together slowly with a paddle attachment pipe around 30g weight onto baking tray.

Bake for 12 minutes at 165°C
