Our friend Eleanor Maidment over at Waitrose Kitchen told us about this Jasmine Tea and Raspberry cocktail and we thought it sounded delicious! She’s been kind enough to send us the recipe for us to share.
It’s a refreshing summer cocktail, and perfect to serve in an Ali Miller teapot with plenty of ice and a few sprigs of mint.
Jasmine Tea and Raspberry Cocktail
1 jasmine tea bag (we like teapigs)
3 tbsp elderflower cordial
Fresh mint to taste
- Place the tea bag in a jug, pour over 500ml boiling water from the kettle and allow to infuse for 2 minutes. Discard the tea bag and allow to cool completely.
- Once cool, stir in the elderflower cordial and gin. Place 2 raspberries in 4 tea cups; gently crush the remaining raspberries with the back of a fork and add to the jug. Fill your teapot with ice, and pour in the cooler.
- Allow to chill for 2-3 minutes, then pour into your favourite Ali Miller tea cups and enjoy!
